I eat a BIG salad every day. It's made of that frilly green lettuce or the red one, chick peas, tomatoes if they're not too cardboard-y, and either walnuts or almonds. A little salad dressing, usually a sweet one. Every day. This is today's:

That particular dressing is some kind of "Italian" one -- I'm just using it up. I don't like it at all. Normally I use sweet ones. And not much of it, since the flavors are always soooooooooooooo strong.
I love love love chick peas!. They're so good - my Mom used to make chick pea salad, with the whole chick peas, dill relish and green pepper, etc. Very tasty. Also another one, with mayonnaise, onion and lemon juice -- also delicious. But I love them in the salad like this - they give it a little more substance.
Those tomatoes are almost like "real" tomatoes! They were on sale at Acme -- 99 cents a pound-- still "on the vine" -- amazing. Not the cardboard kind we get all winter.
But it does take prep time -- when I was still at work I used to make one and put it in a container the night before, and then take it to work in the morning. But I didn't have access to a frig so I ended up eating it at the morning coffee break.
Being able to eat it "fresh" is one of the few "perks" of being out of work!
Yes, chick peas and tomatoes are sooooo good!
I like to try different sweet dressings -- my current favorite is "Vidalia Sweet Onion" -- I think it's one of the Ken's line.
